Roghan Josh is an astounding aromatic dish with Persian and Mogul origins. It began in Persia as a slow cooked dish, to draw out maximum flavour and later, when adopted by the Moguls, it was perfected with aromatics. The Moguls added the unique flavours of the Kashmir spices to the dish, creating what we now know today.
